I've heard this called puppy chow, monkey munch, muddy buddies. Whatever you call it, everyone loves it. I have to be careful to not make this all that often because it never lasts long! I portion this out into snack bags and freeze it. It tastes so good cold! If you are like my sister and unfortunate enough to be allergic to nuts, sun butter works in place of peanut butter.
Ingredients:
1 box rice Chex
1 1/4 cups semisweet chocolate chips
3/4 cup peanut butter
6 tablespoons butter
1 1/2 teaspoons vanilla
2 cups powdered sugar
Preparation:
1. Place rice Chex in a large bowl.
2. In a microwave safe measuring cup or bowl, heat chocolate chips, peanut butter and butter in the microwave for 1 minute. Stir. Heat for another 30 seconds and stir until smooth. Stir in vanilla.
3. Pour chocolate peanut butter mixture into the bowl with the Chex and mix until well coated.
4. Pour mixture into a gallon plastic bag. Add half of powdered sugar, seal and shake well. Add the remainder of powdered sugar and shake to coat.
5. Spread mixture out in a single layer on waxed paper to cool completely.
