My friend Carli hosted us at her house for her birthday and served a taco dinner with her mom's beans as a side dish. They were so good I asked her for the recipe and have made these several times since then. Every time I serve these to a group I get asked for the recipe. This one is a crowd pleaser!
Ingredients:
30 ounce can refried beans (pinto or black beans both work great!)
16 ounce jar mild red salsa
8 ounce brick cream cheese, softened to room temperature
1 teaspoon chili powder
1 teaspoon garlic powder
1/2 teaspoon black pepper
8 ounces shredded Mexican cheese
Preparation:
1. Preheat oven to 350 degrees and grease a 13x9 pan.
2. In a large bowl, use a hand mixer to blend together refried beans, salsa, cream cheese, chili powder, garlic powder, and black pepper until smooth.
3. Pour mixture into greased pan and top with shredded cheese.
4. Bake uncovered for 25-30 minutes, until cheese has all melted. Let cool for about 5 minutes before serving.
