I made Pulled Chicken Tacos with Chili Salsa for dinner earlier this week, and I had quite a bit of filling left over. I used the leftover taco filling on a salad for lunch at work the next day! It was a flavorful, protein-rich salad that was different from my normal salad rotation.

1 tablespoon shredded cheddar
1 tablespoon balsamic vinagrette
