This recipe was one of my first forays into making fish. I'm not a big fan of fish without a sauce, so having a tasty sauce was a necessity. My mom loves this salmon recipe and usually requests it when I'm home and cooking. I make this salmon inside on the stove in the winter, but it takes great grilled in the summer. This salmon is excellent with Broccoli in Garlic Lemon Butter or with aspragus. Enjoy!
Serves 3
Ingredients:
3 salmon filets (6 oz. each)
1 teaspoon garlic, minced
salt and pepper
2 tablespoons olive oil
2 tablespoons lemon juice, fresh or bottled
2 tablespoons butter
1 tablespoon flour
1/2 teaspoon paprika
3/4 cup milk
2 tablespoons stone ground Dijon mustard
1/4 cup dry white wine
1 teaspoon basil leaves, chopped or fresh
1 teaspoon rosemary leaves, chopped or fresh
GF* - To make this gluten free, substitute corn starch for the flour.
Preparation:
1. In a small bowl, combine salt, pepper, garlic, oil, and lemon. Brush mixture over salmon.
2. Cook salmon in a pan over medium heat, skin side down.
3. Cook for 4 minutes, then flip and peel off skin. Cook for at least another 2-3 minutes. Cook until desired doneness.
4. While salmon is cooking, melt butter in a small saucepan. Stir in flour.
5. Add pepper, paprika, milk, mustard and wine to sauce pan. Simmer until sauce thickens.
6. Add basil and rosemary to sauce.
7. Serve salmon with sauce.
