This is a weeknight favorite. I usually have everything for this dinner, and it comes together in the time it takes to make the rice.
Ingredients:
1 large chicken breast, cubed
salt and pepper
1/2 teaspoon garlic
1 teaspoon chili powder
2 teaspoons cumin
1/2 can black beans
1/2 cup corn, frozen or canned
1 cup red salsa
1 cup rice
Preparation:
1. Start rice.
2. Heat oil in skillet. Add in cubed chicken.
3. Add spices to the chicken. Add more cumin and chili powder for a spicier dish.
4. In medium sauce pan, mix salsa, corn, and black beans. Bring to a boil, then turn down to low and simmer until chicken is done.
5. Serve with rice.
