This black bean side is a BBQ favorite in our household. We often make this with BBQ ribs or when we're smoking meat. They are great with Cornbread as a side to soak up the creamy bean sauce.
Ingredients:
2 cans black beans (undrained)
1 cup vegetable broth
1/2 cup brown sugar
1/4 cup ketchup
1/2 onion, finely diced
2 tablespoons red wine vinegar
4oz can diced green chilies
1 teaspoon Frank's hot sauce
Preparation:
1. Add all ingredients to a dutch oven or stock pot. Stir to combine.
2. Bring mixture to a boil. Cover and reduce heat to a simmer.
3. Simmer for 45 minutes to an hour, stirring occasionally. Mixture will thicken. Let cool for 10 minutes prior to serving.
