I had some sweet potatoes and parsnips to use up, so I decided to try blending them together. This turned out so well. I added some syrup to sweeten it up a little and topped it with cheese because why not. This was one of my random experiments that went better than expected. I just ate some grilled chicken with this.
Ingredients:
1 medium sweet potato, peeled and cubed
3 parsnips, peeled and cubed
2 tablespoons butter
salt and pepper
1/2 teaspoon garlic powder
1 tablespoon maple syrup
1/4 cup mozzarella, shredded
Preparation:
1. Boil sweet potato and parsnips for 18-25 minutes, until very soft.
2. Drain and pour into a food processor.
3. Add butter, salt, pepper, and garlic powder. Blend until mixture is very smooth.
4. Add maple syrup and blend again to incorporate.
5. Top with a sprinkle of shredded mozzarella.
