I make homemade sweet potato fries when I grill burgers. They are so easy and so much healthier than anything frozen. I love them with barbecue sauce. Soaking the potatoes in water for a few hours or overnight helps the fries get nice and crispy in the oven.
Serves 2.
Ingredients:
1 large sweet potato or yam, cut into 1/4 inch uniform strips
2-3 tablespoons olive oil
1 teaspoon pepper
1 teaspoon garlic
1 teaspoon paprika
1/2 teaspoon salt
Preparation:
1. Soak potato strips in a bowl of water for a few hours or overnight.
2. Drain potato strips from water and place in a plastic bag. Add olive oil and spices. Seal the bag and shake well to coat fries.
3. Spread fries in a single layer on a baking sheet.
4. Bake at 400 degrees for 35-45 minutes, flipping once.
