I started making this fish dish in college. Tilapia is a mild fish that when extremely fresh shouldn't be fishy at all. I either buy fresh tilapia the day I am going to make it or use Trader Joe's frozen tilapia. Trader Joe's freezes their fish into the packets their distribute right off the fishing boat. Buying it frozen, then defrosting it for cooking is just as fresh as buying fish day-of use at the grocery store. I usually keep a pack of tilapia in the freezer for this dinner or fish tacos. I usually make steamed broccoli and quinoa to go with this fish.
Ingredients:
2 tilapia filets
1/2 teaspoon ground cumin
1/2 teaspoon chili powder
salt and pepper
1 lemon, quartered
Cilantro-Lemon Butter
2 tablespoons butter, softened
2 tablespoons cilantro, finely chopped
1/2 teaspoon lemon zest
1/4 teaspoon paprika
dash of salt
Preparation:
1. Sprinkle both sides of fish with salt, pepper and cumin.
2. Heat large skillet of medium heat.
3. Cook fish 3-4 minutes per side. Fish should flake easily with a fork when cooked.
4. Squeeze lemon over fish.
5. To make cilantro-lemon butter, combine butter, cilantro, zest, paprika and salt in a small bowl. Serve with fish.
