This slaw is fresh and light. We spent most of the summer up at my parent's lake house using their smoker to test lots of different meats - brisket, prime rib, pork ribs, beef ribs, and fish. The favorite sides to our smoking experiments were Cornbread and this slaw.
Ingredients:
3 cups green cabbage, shredded
1 red apple, cored, unpeeled, and cut into matchstix
1 Granny Smith apple, cored, unpeeled, and cut into matchstix
2 large carrots, peeled and cut into matchstix
1 red pepper, seeded and cut into matchstix
2 scallions, finely chopped
1/3 cup olive oil mayo (homemade or store bought)
1/3 cup brown sugar
1 tablespoon lemon juice
Preparation:
1. In a small bowl, mix mayo, brown sugar, and lemon juice.
2. In a large bowl, mix cabbage, apples, carrots, red pepper, and scallions.
3. Toss slaw in dressing. Serve immediately.
