I love goat cheese and avocados. Probably my absolutely favorite combination out there. Having it for breakfast is the greatest way to start off the day! Making this breakfast years ago gave me the idea to make one of my favorite appetizers - Goat Cheese Guacamole. Serve with Breakfast Potatoes. Makes 2 casseroles.
Ingredients:
1/2 an avocado
1 jalapeño, seeded and diced
3 ounces goat cheese (LaClare Farms and Vermont Creamery are my favorites)
1 tablespoon cilantro
1 clove garlic, diced
1 lime, juiced
Roasted red pepper, 4 1-inch pieces (can buy jarred or make your own)
2 eggs
2 strips of bacon, cooked most of the way and diced
salt and pepper
Preparation
1. Mash avocado and goat cheese together. Stir in jalapeño, cilantro, garlic and lime juice.
2. Spray each ramekin with pan spray.
3. Place two pieces of roasted red pepper in bottom of ramekin. Top with 1 1/2 tablespoons of avocado mixture.
4. Sprinkle each ramekin with bacon pieces.
5. Crack an egg into each ramekin.
6. Top with salt and pepper.
7. Bake at 350 degrees for 20-22 minutes for a runny yolk or 23-25 minutes for a firmer yolk.
