I was under the weather over the weekend, so I made some homemade Chicken Noodle Soup. I made quite a bit so it carried over well into lunches. The weather is nice enough now to grill out a few times a week. I love grilling season.
Breakfast:
Oatmeal with blueberries (I buy the pre-portion packets.)
Scrambled Eggs with fresh fruit

Balsamic, Watermelon and Feta Salad
Fresh fruit: plums, nectarines, blueberries
Dinner:
Cajun Hasselback Chicken with Cilantro-Lime Quinoa
Mango-Mustard Beef Shish Kabobs and Mashed Red Potatoes
Salmon with Mustard White Wine Sauce and rice
Gourmet Grilled Cheese and fresh fruit
Steak with Red Wine Reduction Sauce and Mashed Sweet Potatoes
