November is a crazy month for me at work. My client has their Annual Enrollment for benefits, which means my life is crazy busy. That means quick and easy dinners, hosting Friendsgiving, attending Friendsgivings, and having Thanksgiving with my family.
Breakfast:
Oatmeal with brown sugar
Lunch:
dinner leftovers
cold cut sandwiches
fruit: bananas, apples, grapes
Dinners:
Beef Chili (make ahead and freeze for easy weeknight dinners)
Maple Buffalo Chicken with Glazed Carrots
Salsa Chicken with rice
Sweet Potato - Red Wine Beef Stew
Dessert:
Peanut Butter Kit Kat Brownies (use up that leftover Halloween candy!)
I'm hosting Friendsgiving early next week and we are doing a potluck. I'm making Roasted Turkey and Cornbread Stuffing. I'll be preparing everything the night before so our weeknight dinner goes smoothly, which means I grocery shop for all the ingredients ahead of time.
