For my friend Brooke's birthday party, I knew I wanted to make something mint flavored. She loves mint desserts, and I've made Mint Chocolate Cheesecake and Grasshopper Brownies for her in prior years. I also made Chocolate Peppermint Patty Cookies for her birthday as well. These cookies turned out looking awesome and are easy to make. The powdered sugar made a bit of a mess, but it was well worth it. These are going to be a fantastic St. Patrick's Day cookie!
Ingredients:
1/2 cup butter, softened
2 eggs
1/2 teaspoon vanilla
1 box white cake mix
1/2 cup sifted powdered sugar, divided
1/2 teaspoon mint extract
1 teaspoon green food coloring
Preparation:
1. Cream butter in mixer. Add eggs, vanilla, and cake mix. Mix until combined.
2. Add 1/4 cup sifted powdered sugar. Mix batter.
3. Add mint extract and green food coloring. Beat until food coloring is uniformly incorporated.
4. Chill dough for 1-2 hours, until firm.
5. Preheat oven to 350 degrees. Prepare 2 cookie sheets with silicon baking mats or line with parchment paper.
6. Place 1/4 cup sifted powdered sugar into a bowl. Roll dough into tablespoon size balls. Roll in powdered sugar. Place on cookie sheet.
7. Bake cookies for 12-14 minutes. Let cool for 2-3 minutes on cookie sheet before moving to a rack to cool. Repeat will remaining dough. Store in an airtight container.
