After traveling constantly since Thanksgiving, I really need to get back into meal planning to make sure I eat better the next several months. I typically do my weekly grocery shopping on Saturdays. I try to plan meals that have overlap in ingredients, with enough variety to keep the meals fresh and interesting. I love to eat dinner leftovers for lunches during the week.

Dinner: BBQ Pork Chops with Honey Lemon Brussels Sprouts

Breakfast: Strawberry Banana Protein Smoothie
Lunch: Feta Lime Quinoa Bowl leftovers
Dinner: Bruschetta Pesto Chicken Casserole with Lemon Asparagus
Thursday:
Breakfast: Overnight Oats with Blueberries and Pecans
Lunch: Bruschetta Pesto Chicken Casserole with Lemon Asparagus leftovers
Dinner: Chipotle-Lime Cauliflower Tacos
Friday:
Breakfast: Strawberry Banana Protein Smoothie
Lunch: Turkey Chili - I make this ahead of time and freeze in batches to defrost for easy lunches
